Salted Caramel and Chocolate Popcorn

I have to admit, I am a sweet LOVER. I swear, I haven’t met too many sweet things that I didn’t like.

While I am watching my girlish figure, you guys may not be…so…

Here is a phenomenal recipe for a dessert popcorn.

Da’ Bomb-corn

4 bags microwave popcorn, popped

3/4 c. honey

3/4 c. sugar (granulated)

1/4 tsp. salt

3/4 c. peanut butter

1 tsp. vanilla

1 c. milk chocolate chips

1 c. butterscotch chips

1 c. of your favorite roasted, salted nuts

Pop popcorn. Spray a large cookie sheet or roasting pan with nonstck cooking spray. Put popcorn on, or in, pan. Set aside.

In a 2 quart saucepan, combine honey, sugar, and salt. Bring to a boil. Boil for 1 minute. Add peanut butter and vanilla and stir in until dissolved.

Pour peanut butter mixture over popcorn and mix with spoon until all coated.

Melt chocolate chips and butterscotch chips in separate microwave safe bowls, for 1 minute at a time, stirring in-between, until melted. Be careful not to overheat the chips.

Drizzle melted chips, alternately, over popcorn. Stir to incorporate through the popcorn. 

Sprinkle salted nuts on the top, stir, then sprinkle on more. Let completely cool and dry…approximately an hour.

Enjoy!

Store remainder in an airtight container.

Also great as a gift.

Now that I’m back in the saddle again, I am on a mission to get my girlish figure back :) ! (This year has been a whirlwind of surgery and weight gain. Now that the surgeries are over, it’s time to get fit…before forty, lol!)

For work, I like to buy frozen meals because they are easy. I am pretty particular about the meals I purchase (as only some of them are tasty…the others…well…). Anyway, one of the meals that I purchased on a regular basis is called Santa Fe Rice and Beans. While I’ve been out of commission, I have been able to tinker a bit, which has enabled me to come up with a recipe for this frozen meal.

After making the recipe, I can make approximately eight (yes, I said eight) meals for the price of one. Yay! That means I can buy a new Essie fingernail polish…or a new lipstick…a new Bath and Body Works Lotion…or whatever!

So, for all you working gals, happy savings!

Santa Fe Style Rice and Beans

3 c. cooked rice

1 (15 oz.) can black beans (I make my own from dried), rinsed and drained

1 1/2 c. frozen whole kernel corn

1 (10 oz.) can Ro-Tel tomatoes

1 c. salsa (I make my own)

1 c. light sour cream or plain Greek nonfat yogurt

1 c. 2 % shredded Colby jack cheese

1 (8 oz.) can diced green chiles, drained

2 tsp. taco seasoning

1 diced onion

Saute diced onion until translucent, set aside. Preheat oven to 350°. Spray 9 x 13 baking pan with nonstick cooking spray.

In a large mixing bowl combine beans, onions, corn, Ro-Tel, Salsa, sour cream, taco seasoning, rice, and cheese. Mix well.

Spread mixture in baking dish and bake approximately 15 minutes, or until heated through.

Divide into eight portions and freeze in quart freezer zip bags or freezable containers.

Enjoy…while saving mulah!


Who Needs that Fil-A Place?

Chargrilled Chicken Sandwich @ Chick-fil-a

I am a sucker for the famous local FIl-A place that serves sweet chicken! There are just no two ways about it…I love their food!

Well, I have come up with recipes for SEVERAL of their yummy chicken delicacies, and I’m gonna share ‘em with you.

The first one is my favorite…

As we get older, we have to watch what we eat, otherwise we become that and every other thing we eat too…all jumbled together!

This sandwich makes me feel like I’m getting to eat junk food, but is actually good for me!

Char-Grilled Chicken Sandwich

1/4 c. honey

1/4 c. soy sauce

1/2 c. vinegar or dill pickle juice

1 tsp. minced garlic

4 boneless, skinless chicken breasts

salt (to taste)

romaine lettuce leaves ( the restaurant actually uses a curly romaine)

tomato slices

pickle slices

Whitewheat hamburger buns

Combine honey, soy sauce, vinegar (or pickle juice), and garlic in a large zip baggie. Place the chicken breasts (which have been sliced in half to make them thinner) in the baggies, seal, and marinate in the refrigerator for 1 hour.

For these, I use a table-top grill (I use the Geroge Foreman grill). Preheat the grill on high.

After chicken has marinated, sprinkle with salt (on one side only). Place chicken on grill, close and grill, just until done (approximately 3-5 minutes per piece). You want the chicken to be done, but if you cook it too long, it will be tough.

While chicken is cooking, heat large nonstick skillet on medium. Lightly toast buns in skillet. (Use mustard or mayo after toasted, depending on your preference.) Put lettuce leaf and tomato slice on top portion of bun. Put chicken on bottom portion of bun. Put two pickle slices on top of chicken. Assemble two sides together, and enjoy!

I like the honey roasted barbecue sauce that goes with this sandwich when bought, but have successfully used Sweet Baby Ray’s original barbecue sauce in place of the local restaurant chain’s brand.

Trust me, this sandwich tastes JUST AS GOOD!

What’s Shakin’ Bacon?

Since we have such a mountain of zuchinni this year, we are constantly trying to find new uses for it. This weekend we grilled ribs with the usual suspects: baked beans and potato salad. We decided to grill some zuchini too. Instead, however, of just marinating it and popping it on the grill, we decided to “kick it up” a notch by using bacon

Fabulous Results!!!

 

Here is the recipe:

Bacon-Wrapped Griled Zuchinni

salt

pepper

garlic powder

zuchinni

Wash zuchinni, cut ends off,  and cut lengthwise in half. Then cut those halves in half lengthwise, again. Sprinkle salt, pepper, and garlic powder on zuchinni. Starting at the top of the zuchinni, wrapa slice of bacon around the zuchinni (from top to bottom), securing with tootpicks. Grill zuchinni on medium hot grill until bacon is cooked.

It is th bomb-dot-com!

Bacon makes everthing taste better :)
