My family loves Mexican food…
and I even love it more when we can go out to eat it (no clean-up)!
With our growing family (all ordering adult entrees), we have to limit our eating out.
We still have these ethnic treats; we just make them instead of going out so much.
This recipe is for the same Chile Con Queso that one could purchase at any of the local restaurants.
It is not cheap, but it is cheaper than you would pay at the establishment…
It is not figure-friendly, but if you were going to purchase it at the restaurant, you might as well make it for cheaper!
My really cool brother-in-law gave me this recipe…I adapted it slightly. It is SOOOO GOOD! (Needless to say, we don’t make it all the time…my hips expand much too easily while eating right…you can imagine if we had this dish regularly…THUNDER THIGHS!!!)
Here it is:
Chile Con Queso
2 ribs celery, chopped
6-8 green onions, chopped
6 oz. Can diced green chiles
1/2 regular onion, chopped
2 jalapenos, seeded and chopped
1 large can Carnation milk (I use half Carnation and half regular milk)
2 lb. Velveeta cheese, cut in cubes
8 oz. pepperjack cheese, cut in cubes
Microwave celery, regular onion, and jalapeno for 2 1/2 minutes. Add remaining ingredients. Microwave in two-minute increments, stirring after every increment until all lumps stir smooth.
Yummy!
